
Hey y’all, my name is Matt. While attending the University of Louisiana Lafayette on a track scholarship for pole vaulting, 9/11 happened. I immediately joined the military, and my life was changed forever. I am eternally grateful for the experiences and growth that service provided.
Originally from Cajun Country in Louisiana, I’ve always been proud of my heritage. Cooking our fantastic cuisines has always been my passion. During my service, shipping costs for specialty items like boudin drove me to start preparing it myself, and the rest is history. Throughout my military career, you could always find me throwing down in the kitchen for my teams, spreading joy through food.
Upon retiring in August 2023, my family and I moved to Homewood, Alabama, due to a new job position. It was then that we decided to take this dream one step further and start our own business, Roll Cajun Boudin. Our boudin is not only authentic but also of the highest quality, made with fresh produce and prepared the old-fashioned way.
Our initial plan was to buy a trailer and create a mobile grocery store to connect directly with our customers. However, after working with the health department, securing a commercial kitchen, and completing the build-out, we realized we had underestimated the upfront costs of starting a food industry venture. While working in the commercial kitchen, other caterers began asking me to prepare meals on their behalf, and the incredible feedback we received led us to begin catering as well. With some retrofitting, our mobile store was transformed into a food truck poised to serve hot food.
The investment was high, and we’ve put all our savings into this venture because after 21 years of service, being happy and doing something we love has become our top priority. Further, establishing a business based on integrity and wholesome values is incredibly important to us. We desperately need a little more help to push us across the finish line. We currently lack operating capital and still need to purchase several equipment items to serve our customers.
As a 100% disabled veteran, I’ve found that the perception of readily available grants and programs for folks like me is false. Despite applying for over 15 grants and SBA loans twice, we’ve been denied due to a lack of sales and time in business. A friend referred me to this site as a last-ditch attempt to get this thing rolling. Our quality is impeccable, our service unmatched, and our character is our bond.
